You are so right!
The “truth” in science is constantly changing.
Compare a 1960’s Physics textbook ( my period of formal education) to one used today.
And, it’s even more complicated than that. There are things in quantum mechanics that are both “true” and untrue/opposite, at the same moment. They are one thing when you are looking at them, and another when you are not.
Give me the great Truth of God, which is eternal.

Yes. “The more we learn, the less we know” is a maxim that could apply to physics. Scientists ought to be very humble when it comes to these questions. DeGrasse Tyson isn’t.
